Goals
At Brewery Vivant we know that the best way to get things done is to set goals, come up with a plan on how to achieve them, and do regular check-ins on progress. In our efforts to become a sustainable company, we've decided on the following goals and outlined ways we are working to achieve them:
1. Zero waste to landfill
- Donate edible leftover food to those in need
- Compost food and paper waste through Spurt
- Spent grain and yeast given to a local cattle farmer
- Beer runoff made into biofuel at a local company
- Fry oil given to a local biodiesel car owner
- Recycling program for metals and plastics
- Printing double-sided and use ECO font
2. Limit exposure to toxins
- Green cleaning products for the pub
- Working with suppliers to develop green solutions for brew tanks
3. Water to beer ratio of 3:1
- Recapture cooling water from heat exchange and store in tanks
- Training brewer staff to clean tanks with limited water
- Re-circulate rinse water when cleaning tanks
4. 50% food inputs from 250 miles
- Hierarchy: local organic -> local -> organic
- Partner with local farms for as many inputs as possible
5. 25% beer inputs from 250 miles
- Partner with local farms for as many inputs as possible
6. 10% onsite renewable energy generation
- Investigate wind turbines, solar, and fryer oil electrical conversion system
7. Follow green building principles
- Purchase REC's (renewable energy certificates)
- Built on a brownfield site
- Pursuing LEED certification
- Low flow flush option for all toilets, waterless urinals
- Tables and benches in the pub are made from reclaimed wood
- Majority of lumber used in our buildings is FSC certified
- Repurposed and upgraded original light fixtures
- Refrigeration in the brewery uses the most efficient system available
- Repurposed old dairy tanks for lagering cellar
- Recapture 100% of stormwater runoff onsite
